Originally from Victoria, Dayle Merlo was awarded One Hat from The Age as Head Chef of Melbourne’s Orexis restaurant. He moved to Noosa with his young family 20 years ago and settled into the role of Executive Chef of Noosa’s Bistro C.
He has been instrumental in developing this iconic venue to the successful restaurant it is today.
Dayle’s low-key yet dynamic approach of continually evolving and reinventing food ties in perfectly with the vision of the restaurant’s owner, Lorrie Banks, as they constantly strive to enhance, improve and enrich diners' experiences.
Bistro C has received many accolades over the years - none more telling than the loyalty of returning guests who continue to enjoy the team's offerings for breakfast, lunch and dinner.
