After leaving his home town in Italy, Zanellato spent the early year of his career working in top European restaurants including La Pergola alongside Heinz Beck and The Ritz, London. He then travelled to Japan and trained at Ryugin in Tokyo, before eventually making Australia home.
Securing his place as a titan of the Australian food scene during his four-year tenure at the helm of Ormeggio (and achieving two chef’s hats during that time) Zanellato also participated in a restaurant exchange programs at Noma and Attica, providing further inspiration for his own food vision.
With the opening of Zanellato’s first restaurant on Sydney Harbour, LuMi Bar & Dining in 2014, a new era of Italian degustation eating was born with his unique Italy-meets-Japan style of culinary fusion. LuMi Dining has been awarded two Chefs Hats, sat at number 19 in the 2016 Australian Financial Review’s Australian Top 100 Restaurants, ‘Best New Talent’ in the 2016 Gourmet Traveller Restaurant Awards, Good Food Guide’s 2017 Restaurant of the Year and 2019 Top Italian Restaurant in the World (Gambero Rosso).
During this masterclass, Zanellato will share a skill and recipe that is close to his heart: “Cacio e Pepe Agnolotti”, an Italian classic rich and flavour and history.
