Born and bred in Ireland, Mark spent several years in New York City and Sydney before moving to Auckland in 2011.
He immediately made his mark on the local culinary scene working in some of Auckland’s top restaurants then later three years managing Grafton’s Welcome Eatery. Under his stewardship, the establishment won and maintained multiple top industry awards.
A man who lives and breathes all things food, Mark feels lucky that his passion is also his profession. A commitment to the use of only premium ingredients grown, foraged or produced as close to the day’s location as possible is what decides his menus.
His favourite kitchen is ‘anywhere outside’ with an open fire, his favourite foods to eat and cook are anything sourced from the sea and he is big on sustainability.
Recognising that collaboration is central to great culinary outcomes, he loves to work closely with the best suppliers, producers and chefs locally and around the world.
Mark contributes to various media projects and charities within the New Zealand food movement, and dreams of one day opening a producer’s market showcasing the very, very best of Kiwi food.
Mark was a finalist in the 2017 Ōra King Awards and was awarded the winner of the 2018 Ōra King Awards Best Dish New Zealand.
