Growing up in a small rural town in the blue mountains, Bickford has always been passionate about regional produce and following a less is more approach that celebrates nature in its original form.
Bickford has been cooking for over 25 years, ticking time at some of Australia’s most iconic venues (Bel Mondo, Eschalot, Biota, The Gantry) before accepting the position of Executive Chef at Matt Moran’s flagship restaurant, Aria Sydney, which has enabled him to fully utilise his philosophy of stylish and contemporary cuisine with a nod to his native Australia, showcasing the very best of what nature has to offer.
Bickford was named Daily Telegraph’s Chef of the Year in 2015, has won two Sydney Morning Herald Chef’s Hats for both Biota Dining & Aria Sydney and was recently awarded 2018 Chef of the Year at the Savour Excellence awards.
