Yarra Valley Caviar

Yarra Valley Caviar is a boutique fresh-water aquaculture farm at the base of the Rubicon River in rural Victoria, which takes a completely natural approach to rearing and hand-milking its Atlantic Salmon.

It is the only dedicated producer of fresh water Atlantic Salmon in Victoria and a staunch believer in the humane treatment of its fish: which are raised in long earthen ponds at the foot of the Victorian Alps fed by waterfalls, so they’re living in their own natural environment.

The salmon are milked for caviar entirely by hand once a year after being anaesthetized with natural clove oil, and are then gently placed back in their ponds to spawn again the following year.
